2 quarts vegetable oil for broiling
1 cup regular flour
2 teaspoons baking powder
1 squeeze salt
1 ½ teaspoons white sugar
2 eggs, beaten
1 cup ricotta cheddar
¼ teaspoon vanilla concentrate
½ cup confectioners’ sugar for cleaning

Directions
Stage 1
Heat oil in a profound fryer to 375 degrees F (190 degrees C).
Stage 2
In a medium pan, consolidate the flour, baking powder, salt and sugar.
Mix in the eggs, ricotta cheddar and vanilla.
Blend delicately over low intensity until consolidated. Player will be tacky.
Stage 3
Drop by tablespoons into the hot oil a couple at a time.
Zeppole will turn over without help from anyone else.
Sear until brilliant brown, around 3 or 4 minutes.
Channel in a paper sack and residue with confectioners’ sugar. Serve warm.
