Aloo Gobi Curry
1 washed & dried,chopped cauliflower
1 large chopped tomato
1/2 teaspoon asafoetida
1 tablespoon ginger paste
1/4 teaspoon red chilli powder
1 tablespoon coriander powder
1/4 cup ghee
2 cubed,peeled potato
1 teaspoon cumin seeds
1 bay leaf
1 teaspoon powdered turmeric
1 teaspoon cumin powder
1/2 teaspoon garam masala powder
2 pinches salt.
Step 1
To make this easy lunch/dinner recipe, take a pan and add some ghee in it. Heat it over moderate flame. Add asafoetida and cumin seeds to it. Once the cumin seeds start to splutter, add the turmeric, bay leaf, red chilli powder and ginger paste. Mix the ingredients well.
Step 2
Now add the cubed potatoes and keep stirring. Once the potatoes are lightly fried, add the cauliflower florets. Mix and add salt and tomatoes. Cover and cook on medium flame for about 5-6 minutes. The tomatoes will add a tangy flavour to this curry recipe.
Step 3
Add cumin powder and mix well. Make sure that the curry doesn’t get too thick. If required, add a dash of water, cover and cook for 5 minutes, on high flame. Now add the coriander power. Mix and adjust salt as per your taste. Check that the cauliflower and potatoes are cooked well.
Step 4
Add a dash of garam masala powder and turn off the heat. Transfer the aloo gobi curry in a serving bowl and garnish generously with coriander leaves. Serve the delicious North Indian recipe steaming hot with steamed white rice and fried papads.
