Stir-fried Santung Potatoes

8 potato
1 large onion
1 spring onions
6 green chilli
3 cloves garlic
1 tablespoon sugar
1/2 teaspoon coriander seeds
2 pinches powdered black pepper
4 tablespoon virgin olive oil
2 tablespoon soy sauce
1/4 cup white vinegar
salt as required
1/2 piece ginger
1 teaspoon fenugreek seeds
1 teaspoon cinnamon
1/2 teaspoon dry mango powder
water as required

Stir-fried Santung Potatoes Recipe

Step 1
To prepare this lip-smacking appetizer recipe, start by taking the onion, spring onion and green chilies and finely chop them using a clean chopping board. Now, wash the potatoes under running water and peel them. Then, slice them up like and transfer them to a strainer. In a large pot, pour water and bring it to a boil. Now, dip the strainer into it a couple of times and then remove it.

Step 2
Now, take a non-stick pan over medium flame and heat oil it in. Once the oil it hot enough, add ginger and garlic to it and saute it for 30 seconds. Then, add the potatoes to the pan and stir fry for 2 minutes.

Step 3
Then, add the chopped green chilies and stir it for a few seconds, then add white vinegar and half tablespoon of sugar and stir fry is for another minute. Next, add the coriander seeds, mango powder, stir and add the soy sauce and stir again.

Step 4
Finally add the spring onions, cinnamon, pepper and fenugreek seeds and stir fry is for another minute. When the dish is cooked, turn off the flame and taste test the seasoning and adjust what is needed.

Step 5
Now, transfer the dish to a serving dish and garnish with coriander leaves and serve hot!
