Chicken Mole with Mexican Rice

1/2 cup virgin olive oil
1/2 yellow bell pepper
2 jalapeno
1 1/4 cup chicken broth
1/2 cup dark chocolate
3 cloves garlic
1 green chilli
1/2 teaspoon powdered cinnamon
salt as required
3 onion
1/2 capsicum (green pepper)
1/2 red bell pepper
250 gm chicken
2 tablespoon peanut butter
1 cup basmati rice
2 1/2 tablespoon spice chili powder
1 teaspoon cumin powder
1 cup tomato
2 cup water.

Chicken Mole with Mexican Rice Recipe

Step 1 Prepare the sauce
For the sauce, start by heating 2 tablespoon virgin olive oil in a pan over medium flame. Once hot, add 1 chopped onion and saute until it is soft. Next, add chopped garlic along with chilli powder, cumin powder and cinnamon powder and saute them for a while. Once you can smell the aroma of the spices, add the diced tomatoes, 1/2 cup chopped bell peppers, chopped jalapenos, chicken broth, peanut butter, and chopped dark chocolate and mix all the ingredients. Keep stirring the mixture until it is smooth and the sauce starts to thicken. Once done, strain the sauce and keep it aside.

Step 2 Cook the chicken in the prepared sauce
For the chicken, place a pan with 1 tbsp virgin olive oil over medium flame and let it get hot. Next, add the diced chicken to the heated oil and roast it until it turns brown and crispy. Now, add the prepared chicken mole sauce into the pan and coat the chicken well. Add the 1/2 cup chopped bell peppers in this pan and cook it until they are soft. Make sure the chicken is cooked and moist. Once done, take it off the heat and set it aside.

Step 3 Saute vegetables and cook the rice
For the rice, add remaining olive oil in a pan and place it over the medium flame. Once the oil is hot, add the remaining chopped onions, chopped green chilli and remaining chopped capsicum to it. Saute these well until the onions are brown and tender. Next, add rice along with water and mix it well. Simmer for about 10 minutes or until the rice are cooked well. Season with chilli powder and salt as required, and cover with the lid. Once cooked, take it off the flame.

Step 4 Chicken Mole with Mexican Rice is ready to serve
To serve transfer the chicken mole in a plate and serve it with Mexican rice to enjoy!
