¼ cup more-virgin olive oil, divided
2 kilos carrots, peeled and chopped
2 cups thinly sliced candy onion
1 tablespoon thinly sliced garlic
1 tablespoon minced sparkling ginger
2 teaspoons cumin seeds or 1 teaspoon floor cumin
2 teaspoons coriander seeds or 1 teaspoon floor coriander
four cups carrot juice or vegetable broth
2 tablespoons harissa
¼ teaspoon salt
¼ cup sliced almonds, toasted (see Tip)
2 tablespoons chopped sparkling cilantro
1 teaspoon grated lime zest
1 teaspoon lime juice

Step 1
Heat 1 tablespoon oil in a massive heavy pot over medium-excessive warmness. Add carrots and onion; cowl and cook dinner until softened, about 4 mins. Add garlic, ginger, cumin and coriander.
